However, in some regions, especially in the Mediterranean, oysters may grow more quickly. Some growers prefer to let the oysters grow for a longer period, up to 4 or 5 years, to obtain meatier and more flavorful oysters. At the same time, smaller oysters are offered to new consumers who are discovering the product (No. 5 or No. 4).
