Spat marks the beginning of everything. It's from these young oysters (juveniles) that the oyster farming adventure begins. There are two main methods of spat production: wild spat collection and hatchery spat. Each method offers unique advantages, contributing to the diversity and sustainability of the industry and our precious marine resource.

Wild spat collection involves the direct gathering of spat from nature's heart. Oyster larvae naturally settle on submerged collectors, such as chalked tiles or plastic collectors (the industry is working to decrease environmental impact by sourcing bioplastics designed to degrade in the environment). They grow and thrive in their natural habitat, benefitting from the essential elements provided by the ocean. This method helps preserve the specific characteristics of the region's wild oysters. Wild spat collection is often seen as a valuable legacy of the marine ecosystem.

Hatchery spat, on the other hand, is the result of work in a controlled environment. Oyster larvae are obtained through reproduction, allowing for more precise control over the quality and characteristics of the produced oysters. Growth conditions are optimized to promote optimal and healthy development. This method also meets the increasing demand for spat, independent of seasonal variations, while preserving wild oyster stocks. Finally, it yields one-by-one oyster production, eliminating the need for oyster farmers to go through the stage of detaching the spat
