This intermediate phase allows the oysters to reach their full maturity and offers oyster farmers exceptional flexibility in managing their production.

During this period, our oysters are raised with the utmost care, in parks located in Vendée, Normandy, Brittany, Jersey, and on the Étang de Thau. They thus benefit from optimal conditions to promote their growth and develop their organoleptic qualities. They thrive in quality water, under the attentive supervision of our breeders.

The regular manual sorting of our half-grown oysters ensures uniform growth and eliminates those that do not meet our rigorous quality criteria.
